Layered Cornbread Salad

Dreamland BBQ Recipe

1 (6 oz.) package Mexican cornbread mix
1 head romaine lettuce, shredded
2 large tomatoes, chopped
1 (15 oz.) can black beans, rinsed and drained
1 (15 oz.) can whole kernel corn, drained
1 (8 oz.) package shredded Mexican four-cheese blend
8 slices bacon, cooked and crumbled
4 green onions, chopped
1/4 cup chopped fresh cilantro
2/3 cup Dreamland Bar-B-Que House Dressing, divided

Prepare cornbread according to package directions; cool and crumble. Set aside. Layer a (4 quart) large bowl with half of cornbread, lettuce and next 7 ingredients; spoon 1/3 cup dressing evenly over top. Repeat layers with remaining ingredients and dressing. Cover and chill at least 2 hours. Serve with additional dressing, if desired. Yield: 10 to 12 servings.
