Grilled Whole Striped Bass

Weber Grill Restaurant Recipe

2 ounces fresh Italian parsley
1/2 ounce fresh oregano
1 ounce fresh thyme
6-8 garlic cloves
1/4 cup corn oil
1/2 teaspoon cracked black pepper
1 teaspoon WGR Seasoning Salt
1 whole lemon, sliced
1 whole striped bass, about 2-3 lbs, gutted

Clean and rough chop the herbs and garlic, combine with half of the seasoning salt, all of the oil and pepper to make the marinade.

Using a sharp knife, score (3 to 4, diagonal, 1 1/2 inch long, shallow incisions) both sides of the body  Rub the fish inside and out with the marinade and sprinkle the exterior with the remaining seasoning salt. Stuff the lemons inside the belly portion of the fish.

Grill over medium direct heat for 15 to 20 minutes or until the flesh is opaque in color and the eyes bulge, turning only once during the entire cooking process. To serve, simply flake off the meat with a fork. Serves 2.
