Collard Greens


COLLARD GREENS
Moe's Original BBQ Restaurant Recipe

3/4 pound bacon, large dice
1 bay leaf
2 tablespoons salt
1 teaspoon pepper
1 foot sausage, large dice
1 small onion, large dice
1 gallon chicken stock
2 pounds collard greens

Render down the bacon. Add the sausage and onions on medium heat. Cook until tender, 5 to 7 minutes. Add the chicken stock, bay leaf, salt and pepper. Bring to a boil, then add the collard greens. Cook until tender, 1 1/2  to 2 hours.
