Cheddar Mashed Potatoes

CHEDDAR MASHED POTATOES
Moe's Original BBQ Restaurant Copycat Recipe

3 pounds Yukon gold potatoes, quartered
4 ounces unsalted butter
1 cup milk, room temperature
2 cups shredded cheddar cheese (mild or sharp)
2 tablespoons kosher salt
1 tablespoon black pepper

Wash the potatoes, leave the skin on and cut into quarters. Put in a large pot and cover with water. Bring to a boil. Boil for 45 minutes to 1 hr or until soft. Drain the water and return to pot. Combine the butter, milk and cheese with potatoes using a whisk or masher. Season to taste.
