Carolina Honey Ribs

Tony Roma Copycat Recipe

Serves 2-4

1 cup ketchup
1 cup vinegar
1/2 cup molasses
1/2 cup honey
1 teaspoon Liquid Smoke
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon Tabasco sauce
4 lbs. pork spare ribs

Preheat oven to 300 degrees. Combine all ingredients for the BBQ entree sauce in a saucepan over high heat. Blend the ingredients with a whisk to smooth. When the mixture comes to a boil, reduce the heat and simmer uncovered, 30-45 minutes. When thick, remove from heat.

Tear off 4 pieces of foil roughly 6 inches longer than ribs. Coat ribs, front and back, with sauce. Place on foil lengthwise and wrap tightly. Place in oven. Cook for 2 to 2 1/2 hours. Towards the end of the cooking time, prepare the grill. Remove ribs from foil and smother with sauce. Grill the ribs on hot grill for 2-4 minutes per side.
